The holidays are over and it’s back to school. With the school year half over, I’m in a lunch slump. The kid’s lunches anyways. I wouldn’t want to eat the same ole sandwich every day, so I don’t know why I expect them too. It’s time to jazz up the peanut butter and jelly and I promise it’s not hard at all. I made a few variations and I already had everything on hand. What parent doesn’t keep peanut butter and jelly on hand? I know I always do. I’ll even make myself a sandwich at times. I’ve got four variations below, but the possibilities are endless!
I tend to go with bananas, but a lot of fruit could work. It takes no extra time to slice part of a banana and add it between the peanut butter and jelly layers. Smucker’s Concord Grape Jam and Jif Creamy Peanut Butter are the go to in our house. We don’t do crunchy peanut butter, but we do like all the Smucker’s Fruit Spread flavors! Better yet, Target Cartwheel has an offer for 5% off Jif and Smucker’s. Like you aren’t going to Target already.
If you make breakfast and happen to have leftover bacon (I know, leftover bacon isn’t possible, but try!), add it to the pb&j. My son will eat anything if bacon is involved, so I knew he would like this!
Make The Sandwiches Fun
Cut the bread into smaller squares, then layer: bread, peanut butter, bread, Smucker’s of your choice, and bread. I make three or four and they fit easily into my daughter’s bento boxes. Add a toothpick with a little washi tape flag for flair.
PB&J Granola Wrap
1 flatbread or small tortilla
Jif Creamy Peanut Butter
Smucker’s Fruit Spread
2 strawberries, sliced
1/4 banana, sliced lengthwise
2 tbsp granola
Spread the peanut butter over the entire tortilla (we always have tortillas on hand, so that’s what I used). One one half, spread the fruit spread. On the same half, add the banana slices and strawberries. Sprinkle with granola. Roll is up and slice for easy eating.
